Depends on the state where you live. When I got my license about 150 years ago, we all had to learn to parallel park. that was part of the driving test. Today, its a different test, but everyone should know how to parallel park. I wouldn't suggest doing it with one hand during your test though. That could get you a failing grade.

In Alberta Canada, when backing in a straight line, you may use one hand. Usually it's the left hand held at 12 o'clock, with your right hand behind the passenger seat and sitting on your right hip, and looking out the rear window most of the time.
When reversing around a corner, or parallel parking, two hands must be used due to the amount of steering you have to do. Using one hand while parallel parking or turning in reverse or "Palming" the wheel will get you demerits on your driving test.

There isn't a rule as to how many hands you have to use. Most people do this one handed because they turn around and place the other hand on the headrest (or near it) to be able to see behind them.

In L.A., it is preferred so that your other hand is available to flash the finger to other drivers. (Just joking.) Get yourself that Lexus that parallel parks by itself.

I would find it difficult to parallel park with both hands...You will get in trouble if you try to do it with mirrors only. You are expected to turn around and look out the back and side windows to get a realistic picture of where you are going. The mirrors distort distance. Good luck.
