how fast do they go when they normally test a car for its safety ratings you know when they crash into the wall and all that other stuff?

They vary, full frontal collisions are around 35 mph for NHTSA and overlap frontal test for IIHS are @ 40 mph. Side impacts are generally around 31 mph - 32 mph.
