Do I need a tow package or will just the hitch suffice?

I have a 2005 Honda Pilot and I will be hauling approximately 3000 pounds (includes boat, motor, and trailer).

The towing capacity without a tow package is 3500 lbs. It should do fine without a tow package.

A tow package is not something you want to do aftermarket anyway. There is too much involved. Someone else mentioned that a tow package was nothing more than a hitch and a transmission oil cooler. That is not so. A towing package consists of heavier rear springs, a class 3 tow hitch, bigger brake rotors, calipers and pads, wiring for trailer lights and electric brakes (fused separately from the standard vehicle wiring), a transmission oil cooler and either a heavier clutch on a standard or a switch to keep the transmission from shifting into overdrive on an automatic.

Check your state regs!
A lot of states require trailer brakes on any trailer and whatever is on it with a combined weight of 3000 lbs. and over, whether you live there or are passing through.

Usually a tow package is only a transmission cooler and tow hitch. As long as you are towing under the maximum tow weight for your vehicle you should be fine. For the Honda Pilot because it is so small I would be more concerned about stopping than your transmission overheating. But 3000 LBS should be fine.
