Why is red chosen as "STOP" sign?

bruce
because red has the lowest frequency and the highest wavelength compared to all the other colours in the visible spectrum

Red, as the universal color for danger, grabs our attention. If the word STOP was not on the sign and just the shape and color where visible would you still STOP? Maybe not but you would slow down and proceed with Caution! Even when my son was only 2 he knew that the sign meant STOP!

Red causes excitement and heightened awareness, in other words, drivers are likely to notice it and pay attention.
