I have tried looking for a list of Embassies and Consulates in Colorado but I have not had success!
Also does anyone know If I can become an Intern for an Ambassador or consulate as a high school senior?

I would doubt if there are any. There may be a honourary consul, a part timer who assists tourists from a foreign country with paperwork problems like lost passports but embassies and consulates deal with matters at a national level and would be based in Washington or New York.
