Marrying will help if you are trying to sponsor him. If you are not married, you need to live together for 12 months before you can sponsor him. If you don't want to sponsor him, he will have to apply on his own somehow and then it's a question if he qualifies for any immigration program.

If you marry him right now and apply to sponsor him, you have two choices of application. You can ask for it to be processed in Canada completely or have his file sent to Australia. In both cases, he can apply for a visit visa extension with the sponsorship application.

If you ask for it to be processed in Canada, it takes longer and he can't travel while it's pending, you would apply for an open work permit with your sponsorship application and visit visa extension and he might get it in 6 months if you are lucky. He might get PR in 12 to 18 months. If there are any problems with your file, immigration not convinced of your relationship or something, your file would be sent to your local immigration office and depending on their workload could be delayed another 1-3 years.

If you apply to have his file processed in Australia, he can still travel while it's being processed but he would not get a work permit, instead he would go straight to PR in give or take 6 months if all goes well. If an interview is required, he'd have to go to Australia for it though. If you were denied for that, you could appeal and might take another year.

So many questions indeed. While I would very strongly recommend you look through http://www.cic.gc.ca, I can mention a few things here.

Marrying your fiance will not speed up any process whatsoever. He would not be able to work while on a visitor's visa. Assuming he qualifies to immigrate here, the process will take a long time.

Are you aware of the economic situation here? Canada is in a very serious and deepening recession. What few jobs there are out there will not go to foreigners when there are qualified Canadians who can do the job. That means it will be extremely difficult for him to find any work here. That doesn't mean he shouldn't try but it does mean that neither of you should expect things to happen fast. I only say this because the tone of your note seems to imply that you want for things to happen fast. Sorry, but immigrating to Canada doesn't happen quickly.
