If they have you on camera, they might, but usually if you make it out of the store and off their property you are ok.

You are asking this question in the immigration section so is it acceptable to presume that you are a permanent resident of the US?

It depends on where you live. In CA, this would probably fall under petty theft. However, if you are caught and convicted, and then convicted again of theft, it will be for grand theft - even if you only took a penny piece of bubble gum

You are generally allowed one petty offense on your record. A second conviction for a crime involving moral turpitude would be grounds for deportation and "they" would definitely come after you. Especially since they would probably find out about you at the jail where they wouldn't have to hunt you down.
