What happens to your passport application after it's accepted by the post office?

I recently applied for a US passport, on Feb 12. I was told the application will be sent to Seattle, WA. I live in Oregon. I called yesterday to check on the status since it did not show online. They told me that it was in North Carolina processing. I was just curious if anyone knew the process. I assumed it would be processed in Seattle and was surprised to hear it was in North Carolina. I looked on line to see if there was any information on the processing steps but didn't find any.

Whereas there a 13 Regional Passport Agencies where applicants who require a passport in less than two weeks may apply in person, one is located in Seattle, there are only 3 National Passport Processing Facilities where the passports applied for at the various Passport Application Centers (i.e. Post Offices) are sent to for processing. You should get yours within the next eight days since they grant a four weeks service for regular processing at the moment.
