Who exactly considers you to be Irish-Americans? As it relates to nationality, there is no such thing as an Irish-American, or Canadian-American, for that matter.
Now, as it relates to race, that's another story, but I don't think that's what you're asking.
The direct answer to your question is either 1) Mexican or 2) American. |

Mexican. My sister is married to a Man from Mexico and he calls him self "Mexican" as do all the wonderful people of Mexican descent I have met.

I have many Mexican/ American people married into my family. We don't really call them much of anything except by their name like everyone else.
If they speak of it they say American but some of their parents say they are Mexican Americans. (if they were born in Mexico)
I am a German/American amoung other things but that doesn't come up often unless talking about heritage.
Don't worry about politically correct. There are people who will be offended no matter what you say and others who don't care what you call them as long as it's not something mean spirited. |

Mexicans don't consider themselves Spanish, so Mexican-American if they really need a hyphenated label. Most prefer to call themselves Latinos, or Latinas (if they're girls). |

Political Correctness is the attempt to deny reality by denying people the ability to call a "spade" a "spade", (instead calling it an "excavation device".)
A spade, in this case, indicates a specific, special piece of equipment. An excavation device could be a shoe box used to scoop dirt, we wouldn't know, because this term groups different things under a single, non-descript and useless term.
Ask dark-skinned Jamaicans whether they like being called "African-Americans" when they have nothing to do with Africa. It is insulting, just ask them. |

Good question. I don't know that anyone is known as a Canadian-American (although I know some that could be considered this.)
If your Irish grandparents had landed in Mexico instead of Canada, I bet you'd be Mexican-American and not Irish-American. |

If you were born in the United States then you are American.
If you naturalize then you are American.
Everyone else is from the country they were born in and are still citizens off. |
