Pulled Over?

Today a cop in an oncoming lane saw me speeding, did a U-Turn and would have pulled me over had I not turned off onto a back road(Didn't see me turn). My question is, in the future can this cop pull me over for what happened today even if i'm doing nothing wrong?
Additional Details
Can someone knowledgeable on this subject respond with something more than a "yes" or "no" and include a law or something that would make more sense to me?

Many departments have dash-mounted cameras these days because they're cheap and they protect both the police and the citizens by showing what actually happened during stops and/or chases.

If the officer in question had a dash-cam, I'd anticipate a summons in the mail.

Be aware that even without a camera, your car's make, model, color, and your driver description has been given by that officer to everyone with a badge out of his station or barracks to keep an eye out for you. The police don't take kindly to runners.

Did he see your face? What prevents you from telling him your brother borrowed the car and he speeds all the time? Can't prove it, can he?

Yes. The best thing to do is just pull over next time.

Most likely the cop will not recgonize you again unless they got your plate number. Just be on good before for the next couple weeks.

Well your first problem was speeding. Your second problem was running away. Now your problem may be a ticket if the officer got your tag number! Don't think that just because you got away that the officer will give up. Sometimes they will chase you until you give up. If I get pulled over, I make sure to be in an open area (many noisy people) around. You can never be to sure with police officers these days. Some people will dress up in the outfit and pull you over and do God knows what to you. If you remember on the news, the girl that got raped by two men posing as police officers. I don't believe there is a law against an officer making a u-turn unless it is in the city. City wide it is illegal to make a u-turn anywhere and if you are caught you will get a ticket, PERIOD! If the officer remembered what vehicle and tag number of your vehicle was, you might want to check your mail box because you might get a ticket in the mail.

the same cop can pull you over 3 times and after that it is called harassment. however if he recognizes the car or you again then it is fair game for them. and if he has gotten your plate he can or could have ran it for wants and warrants then you have created a bigger problem. so recommend that you pull over the next time and keep your speed down because the next time you may not be so lucky. also recommend that you have your license registration and insurance handy in case. and you may receive ticket in mail if he got your plate number.

The ticket can be written up to one year later in the state of IL

In most states it doesn't matter if you are the driver or not. If it happened in a vehicle registered in your name, you are responsible for it. (Makes you really think about loaning out your car, doesn't it?) And yes, they can pull you over at a later date for your actions. In fact, if they managed to get your tag number you may get a citation in the mail for speeding.
