The cops just sitting down or eating and I just walk by and Absolutely let one blast (kind of wet) in his face, no contact... would I face any legal charges?

Well, technically you did not commit a crime. But it's important to make 2 clear distinctions here, especially in regard to these "What If" questions.
For these "what if" questions, It matters little whether or nothing something is legal or illegall, constitutional or unconstitutional, because in reality, the cop will probably wrestle you down and arrest you.
A cop is not a judge, a lawyer, or a law professor.
What I'm trying to say is that while it is not illegal, you would probably get arrested for it, and you might get released if you took it to trial. But after all of that, does it really matter?
The question is: if you farted in a cop's face, can he do anything? Remember, the legality for our purposes is irrelevant. I would say yeah, he'd probably slam you to the ground.
