In California Is it true that if you go over 120mph, the cops won't try to pull you over?

Some police will not bother to pull out, however, that doesn't mean your in the clear. I can assure you that you can not beat the radio. All it takes is for him to radio ahead to another unit to get ready for you. And yes police cars have modified engines and other parts to boost performance. The specs depend on the vehicle.

Why wouldn't they pull you over? A cop car can go that fast. You cannot drive 120 for a long time, because of the roadway, curves, other traffic, etc. The police also have a helicopter and/or airplane. Eventually you'll run out of gas, then you'll be driving close to zero mph.

probably. some departments have a no pursuit policy once you reach a certain speed or a no pursuit policy at all because of liability and it might be too dangerous for other peoples safety to pursue the suspect. that doesnt mean they cant find you though. all police cars are upgraded so they go faster and turn faster than normal cars

In the UK they get the helicopter out to follow you and will then catch up with you, eventually.

You can also be charged with speeding after the event by letter. In fact here the police do not usually bother to 'pull over' speeding motorists, the car camera/recorder gets the details and you are nicked, by post.

No you can't drive 120 mph over the limit and not expect the cops to stop you. One way or another they will.
Generally 10 mph over the speed limit you won't be stopped but even at that, a cop can stop you for 1 mph over the limit. The speed limit is just that a limit you must obey or face consequences.
Some cities have a no chase policy but guarantee they already know who you are, have your tag and id on camera and if they don't get you today, they will get you. When you least expect it, they will get you.
Those camera's in their cars are pieces of magic and a camera does not lie.
as for the vehicle modifications, police cars are equipped with a police package and it has nothing to do with after market parts. The package has to do with the heating and cooling of the engine because it takes so much abuse, long idle times, continuous running for duty, etc. The package also has to do with the lights, electrical wiring, tires, etc.
After market parts are parts that are generically made to fit more than one type of automobile. Not to be confused with genuine parts which are made specifically by a particular automaker, i.e. Ford parts or Chevy parts for a particular Ford or Chevy car.
Now police packages are not available to the general public on their vehicles but if you are savvy enough, you can build your own engine and get the same kind of performance out of it.

no, that is totally wrong. cops won't pull you over if you're going over 180, since they'll forget the land chase with their cars and get their helicopter instead.

in the late 1990s a dude in a Ferrari nearly ended up in my neighborhood after driving 155 mph and chased by the cops until he lost control and crashed into a pole. it was along chase, and it was televised. 155>120, so definitely cops will chase you even if you're over 120 mph.

cop cars have special parts, mostly a special heavy duty transmission and a more powerful engine. they do not modify their patrol cars, the cars come modded. if you ever buy a used police car, you'll find the tranny has some kind of unlimited warranty on it. they're super-extra-ultra-heavy duty.
