Obviously there aren't many lawyers who want to tackle your question. Nor many who know what they're talking about.
You live (I presume) in the USA. You have the right to free speech. You cannot (legally) be arrested for being sarcastic with the police. Period. End of story.
Now, that does not mean in a situation where the police have the right to arrest you and are choosing not to, that your choice of sarcasm might not tip the balance in favor of going to jail - but that should be a matter of common sense and you didn't ask about that.
