I am writing a term paper (10 pages) which deals with how police fight organized crime. However, I'm having trouble finding sources on what sort of doctrine or tactics local, national, and international police forces use. Links to full articles or book suggestions would be greatly appreciated.

You should find a police or sheriff's station near you and ask to speak with a gang unit officer. Yes they do all kinds of organized crime. You will get the most up to date information and things you can't read in books.
