lets say it was an accident. and you weren't drinking or anything.
would you be sent to jail if they die? what if they're only injured?

if they rule it as accident you will get fined and probably a reckless operations on you.

Yes, you could go to jail. If police officers on the scene determine that there is probable cause that you intentionally or recklessly caused the collision then they have the option of arresting you. At that point you would be considered innocent until proven guilty however still have to go through the legal process to establish your guilt or innocence.

In many instances an officer may have probable cause in their own mind but will not make an arrest unless the collision was clearly intentional. Instead, the case would be referred to investigators and a prosecutor. If an investigation finds that you committed a crime and a prosecutor accepts the case, an arrest warrant would be issued.
