Can I write something like this and have only the client sign?

"I [Customer] do acknowledge that I have read the Agreement and agree that it is the complete and exclusive understanding between [Me] and [Customer]." X______________________ (Signature)

TOS doesn't have to be physically signed to be enforced (i.e. online/computer TOS agreements), but what you wrote there is more than sufficient.
