My cousin plead not guilty but...?

he was pleaded not guilty for assualt and making criminal threats. but why does he still have another court date?

The next step after a not guilty plea is to schedule a trial. The attorneys need time to prepare their case.

There may be several court dates, as there may be motions hearings, an if he is charged with a felony, he has the right to a preliminary hearing.

That was most likely just his arraignment. If he pleads not guilty there will be a trial or a hearing.
