Flying for work on the week-end. Can I get the time back?

My employer wants me to fly on the week-end for work (a long flight that takes more than 10 hours).
Is there any law that protects me and says that my employer has to then give me the time back?

No, there's no law. Some employers may allow for this contractually, but most don't. It's expected that if you need to travel for work then you will travel at whatever time is convenient to the business, and if this happens to be your own time then tough.

However, when it's such a long flight, if things like jet lag are going to be an issue then it would certainly be reasonable to arrive at work late in order to sleep in for a bit.
