How can you find out what the "unwritten" rules of a workplace are?

Ears open, mouth shut. Listen to what others have to say; don't offer strong opinions or take sides until you've had an opportunity to observe who is allied with whom, who is in favor with (or sleeping with) the boss, who can really make things happen, and so on. Don't rush to share personal information about yourself until you're sure it won't come back to haunt you later.
If you can align yourself with a mentor who is a strong performer and/or enjoys positive recognition from the boss, so much the better - they are liable to clue you in to things you may not learn otherwise.
