Depends on the city if you want to be a police officer or county if you want to be a sheriff's department.

NYPD - requires 60 units of college courses

In CA, the sheriff's department in the Inland Empire (Southern California) only requires a high school diploma. You earn college credits while going through their 6 month training academy (not enough to get an associate's degree, but some).

Most states require you to be POST certified for the state (Peace Officers Standards & Training).

So, which city or county are you looking to work for? In which state?

In some places as little as a high school education. The police department will train you.

Check with the city/state police department you're interested in working for. Some require only a high school diploma; some require an equivalent of an AA degree.
