Is there a law that makes it so your employer has to give you time off for work?

I asked for next Saturday off in advance for school testing and my boss said no (there's plenty of other people for coverage). Is there a law against this so I can go take my mandatory testing?

nope. he doesn't have to give you off. but if he said no id either call in sick or straight up tell him that regardless you will be going to that testing and ask if he wants you to come in when your done. school is way more important than any job trust me

nope -
the only laws there are (and they vary state to state) are usually that they have to give you an unpaid break after 4 hours of work
(this is usually considered your lunch break)

other breaks - 10 or 15 minutes in the 1/2 of a shift and again on the 2nd half of a shift are not usually mandatory
vacation, sick time, personal time etc..... no law on this

for minors under 18 the laws are completely different - hours worked and breaks are more defined
