What happens when...?

You file a complaint to the Labor Board? Is there an investigation of the business? Would you say these are grounds for a complaint?
-Told the business takes out an hour for lunch out of each paycheck but you are not allowed to take an hour lunch.
-Being docked hours and not explained why. Not willing to show time card.
-Having money taken out of your check for the drug screening, even though the business has already paid for it. (did not sign a release form).
-On day off, told you are on-call and not allowed to leave your house.

The things you mention are illegal for the company to do. If you file a complaint with the Labor Board, they'll investigate.

You don't need ground. All government agencies are required to help the victim to investigate even it is a hunch.

Or you can simply sue the employer at court.
