One service I've seen being done successfully by a "solo-practitioner" paralegal is corporate services, i.e. acting as the agent for corporations, taking care of corporate filings with the secretary of state (incorporation documents, annual reports, etc.) and various corporate formalities like organizing the minute book and stock certificates, etc.

If you have more of a litigation background, there's probably some contract work available from time to time from solo lawyers or firms whose own staff is overburdened by a large case - like reviewing and organizing discovery materials and the like. This would likely not be done out of your home, though.
