Why would someone want to earn an associate degree in paralegal studies? What are its' benefits?

Obviously I know a person wanting to be a paralegal would want to secure a degree in paralegal studies..... but if one didn't want to work as a paralegal.... what would he or she want with the degree?

If you wanted to work in the legal field, yes. If not, then get an Associate's degree in another subject.

Having a law-related degree is a good idea because the law deals with everybody. No person is above the law..... it applies to all.

I have an associates in paralegal studies. If you want to go to law school or be a paralegal, this is the way to go. Otherwise, there really is no point. IMO
