I missed out on ROTC. I suppose I could take a few extra years, but my current understanding is that some degrees would allow me to enlist as an officer. Are there variations between the branches as well? I'm considering the military as a lifetime career, so I am curious. Thanks.

BA/BS/BFA/BBS/B.Mus...am I getting through here? All you need is a Bachelors Degree from a regionally accredited college or university.
One of my good friends was an EWO on a BUFF (B-52)...his degree? B.F.A., Painting.
Here is my bizarre background...I was both an SSgt and a Captain in the USAF:
A.A., Bio. Sci.
B.A., English/Zoology/Anthropology (Stupid Triple Major)
B.S., Biology
M.A., Psychology
M.Div., Theology
M.P.A., Public Administration (Health Care Delivery)
Ph.D., Clinical Psychology
All that and a dime (plus a license) got me Direct O-3 as a USAF Psychologist.
BUT...N.B. A degree is NOT a guarantee of an OTS/OCS slot. There are MANY enlisted with a BA/BS...and even an MA/MS. For the record, our NCOIC at the USAF Hospital, TAFB, also had a Ph.D. in Clinical Psychology, but hadn't completed his license process yet. (After he got licensed, I was one of his professional references for Direct Commissioning) |

As Joe posted, all bachelor's degrees will get you in but if you are looking to become a specific type of officer (like supply, jag, etc) then you would need to specialize in a particular area(law, accounting, medical etc). |

Any degree.
I decided to get a degree because 1). I'll always have it for later in life, and 2). Even though I receive training in this area for my MOS I have a better understanding and can do a better job.

Well for line positions, any bachelors would work. If you're interested in a commission in a professional field, like legal, or medical, your degree would have to be in that field. |

Any degree from an accredited 4 year college or university would get you into OCS. After that, becoming an officer is all about you, whether you wash out of OCS or not. |

So far, the answers are correct: TECHNICALLY you can hold ANY four year degree and use that to become an officer. As already discussed there are certain career fields which require degrees or qualifications in certain areas, like medical, JAG, ADC, chaplain, and Comm.
However, something you also need to consider is the branch significance. I can't talk for other branches, but for the air force, 80% of our officers have to come into the service with a technical degree. That means that while ANY degree CAN get you in, a technical degree is more likely to get you in. That means you're best off with engineering or hard sciences.
