I have seen videos and when ever a plane is launched off a carrier, the plane turns left or right immediately. Why is this?

In case of a cold shot [insufficient steam for launch], this allows you time to get out of the ship's way.
We had one cold shot on an A4 on CVA-31 - pilot punched out, chute opened, and he drifted to the fantail and was caught before he went over the side...never got wet. |

Probably to get out of the way so that another plane can take off immediately afterwards. They launch multiple planes very quickly from the carriers. |

Here's a good explanation of the landing procedures. The part that specifically addresses your question reads:
"As soon as an aircraft lands, it's pulled out of the landing strip and chained down on the side of the flight deck. Inactive aircraft are always tightly secured to keep them from sliding around as the deck rocks back and forth."
Imagine: After the plane lands, you have a big heavy wheeled vehicle with jet engines still running (with their jet wash still a hazard for on deck personnel) on a rolling ship. They want to get the plane out of the way, secured, and shut down ASAP. |
