Now, both accounts have more than enough to cover the cost of the course+living expenses ON THEIR OWN, so I'm hoping including both of them will bolster my chances of success.
I'm worried about the letter from the bank. Basically, all I have the representative put down is my address, a statement the account is in my name, the account number, the amount of funds, and a statement the account has had no withdrawals since It's been opened. Additionally, it's signed, printed with a Wells Fargo letterhead, and stamped.
Now, the MAIN thing I'm concerned about is the fact that my course starts on September 5th, and I am only going to be sending this application in on Monday (Aug 17th). Do you think this is going to ruin my chances of obtaining my visa?
I should note I will be applying IN PERSON at the Chicago consulate during walk-in hours.
Is there any additional documentation I should include?

Check, check and recheck your application form. Most refusals are as a result of two things - mistakes in the application and insufficient funds.
Read the Policy Guidance and make sure your documentation conforms exactly.

The funds just to clarify have to be the equivalent of £7,200 plus your first years tuition if the course is for longer than nine months if you are studying in Inner London. For Outer London and elsewhere in the UK, the funds available must be £5,400 plus the first years tuition. Make sure you have left enough leeway to cover currency fluctuations.
You have left it tight but the Chicago office is giving same day decisions provided applications are 100% correct. Make sure you arrive in time. Late arrivals will not be admitted.
